Well, if you're gonna go super exotic, it's hard to say...tons of good seats can be had in those kinds of cars.
In a more reasonable car, though, R32 for sure:
(with the cloth centers, of course...cloth centers >> full leather)

god i love that fuzz on the wheel and the seats in the DTM. I WANT IT TO COAT THE ENTIRE INTERIOR OF THE GTI!!!

While I've never sat in either of them I'd be willing to bet the R32 or the Lancer Evolution both have really nice seats.

I always liked the seats in the miata...they dont look like they came from a jet fighter...but they hold you in all the right places.
But if you want the coolest...Porsches new adaptive sport seats take the cake as far as im concerned. seats which use air bladders to fit each driver individually. a close second are the 100% custom made for owner seats in the Saleen S7

the koenigsegg seats are supposed to feal amazing
you know a car is serious when the stock seats are set up for a 3/5 point belt.
the Enzo has 3 point safety belt that is almost EXACTLY the same as their GT race version Ferraris
the Holden GTO has really really good seats too

I can say that the R32 seats are great!
The stock S2000 seats are so good I put them in the Supra until I got my Recaros back from the shop. Whoever told you Toyota seats were good, check the cushioning after 10 years and see how it stands up.
